VEGETABLE BOX RECIPE FOR CUCUMBER SALAD WITH RADISHES & APPLE

AN EARLY SUMMER SALAD TO ENJOY

A salad that already tastes like summer! The crisp freshness of the cucumber combined with the tart sharpness of radishes and the sweetness of the apple make this salad so aromatic. At the same time, it can be prepared in no time and without any cooking effort.

Salads and raw vegetables are ideal if you want to provide yourself with the best of fruit and vegetables even in your stressful everyday life. They can be prepared quickly and can be so varied. By adding proteins, such as fish, dairy, meat or vegan alternatives, and carbohydrates, for example bread or rice, they transform into a filling and wholesome meal.

The advantages: In the raw state, all vitamins, enzymes and minerals in the food are fully preserved. The water-soluble vitamin C, for example, is destroyed by heating. In the case of the fat-soluble vitamins A, E, D and K, the body also needs fats so that it can process the vitamins. Therefore, it is recommended to always add a little oil not only to salads and raw vegetable dishes but also to smoothies. The many fibers in raw foods improve intestinal health and strengthen the immune system. However, not all foods are suitable for raw consumption. Beans, for example, contain toxic lectins before cooking. Grains and potatoes are also very difficult to digest raw. Therefore, always make sure that you are well tolerated when eating fruits and vegetables raw. The ingredients in our recipe can be eaten raw without hesitation. All are well tolerated raw and provide you with this delicious salad with many important nutrients.

CUCUMBER SALAD WITH RADISHES & APPLE

Ingredients for 2 people
1/2 cucumber
1/2 bunch of radishes
1 small apple
1/2 onion
4 lettuce leaves
2 tablespoons oil
3 tablespoons vinegar
spices: Salt and pepper

 

Preparation:

  • Peel the cucumber, clean and wash the radishes.
  • Wash the apple, divide into wedges and remove the core.
  • Wash and carefully shake off the lettuce leaves.
  • Finely dice the onion and blanch briefly with boiling water, then drain. (Blanching makes the onion more digestible).
  • Slice the cucumber, radish and apple slices.
  • Mix with oil, vinegar, salt and pepper and arrange on lettuce leaves. Enjoy your meal!
