POTATO AND RADISH SALAD WITH BERLIN MUSTARD
INGREDIENTS FOR 2 PEOPLE
500 g potatoes
1 onion
1/2 bunch radishes
3 tbsp oil
200 ml vegetable broth
3 tbsp vinegar
1 tbsp Berlin mustard
spices: salt, pepper
PREPARATION
- Wash potatoes and cook unpeeled for 20 minutes. Meanwhile, finely dice onion and sauté in hot oil until translucent. Add broth and vinegar. Cover, bring to a boil and simmer over moderate heat for 5 minutes.
- Remove broth from heat, stir in mustard, salt and pepper. Rinse potatoes and peel. Cut into thin slices directly into the hot broth and mix gently. Leave to infuse for at least 30 minutes.
- Clean, wash and thinly slice the radishes. Add the radishes to the potatoes and season if necessary. Enjoy your meal!
