This week:
Spinach-potato-apple-pan with yoghurt ketchup sauce
Ingredients for 2 persons
Spinach-potato-apple-pan:
400 g potatoes
200 g spinach
2 shallots
1 apple
2 tsp oil
Spices: salt, pepper and 1 teaspoon of oregano
Yoghurt ketchup sauce:
120 g yoghurt
2 tablespoons ketchup
1 garlic clove
2 tablespoons fresh herbs
Spices: salt, pepper
Preparation
Spinach-potato-apple-pan:
- Steam the potatoes in their skins until soft, peel and cut into thin slices.
- In a coated pan fry the potatoes, the chopped apple and chopped shallots in oil, season with salt, pepper and oregano.
- Put spinach with a little salt in a pot, cover and let it collapse in 2 minutes at a good heat. Drain in a sieve.
- Mix the spinach with the potato, apple and shallots mixture, heat for a moment, season with salt and pepper.
Yoghurt ketchup sauce:
- Mix yoghurt, ketchup, chopped garlic clove, finely chopped herbs (e.g. parsley, basil), salt and pepper to a sauce.
- Enjoy spinach-potato-apple-pan together with the sauce – bon appétit!
